Finding healthy recipes that are easy to make can be an overwhelming chore sometimes. I can spend forever scrolling through Pinterest deciding what to make.
I like to select recipes that use simple ingredients, contain lots of flavor, and does not require a lot of pans! I am for as little clean up as possible.
I also keep in mind my 3 year old’s taste buds and my 1 year old’s chewing ability. I am a believe that everyone is served the same dinner. There will be sometimes where Melina is not found of the main dish but will fill up on the veggies & pasta offered.
Most times that is no problem, she is willing to give anything a sampler, which I love!

I believe that our health is largely determined by the food we eat, so it is a top priority to make sure I am providing healthy meals to my family.
Here are my top healthy recipes that we have been loving!
1. SALSA FRESCA CHICKEN BAKE
I recently just found this recipe and am IN LOVE! Hence that is why it is number 1!
This meal is packed with freshness and a ton of flavor without having to do much work, my kind of meal!
My daughter was eating this and said “Mommy can you make this again tomorrow?” You know it’s a keeper when the kids enjoy it!!

2. ONE POT CHICKEN BROCCOLI RICE
I love chicken & rice recipes, they are the perfect comfort foods. I mean what says comfort better than chicken & rice??
My girls love broccoli so we like that we can just combine the two for convienence and great taste.
Super easy dinner that can be put together with little effort.
oh & I like that this recipe adds cheese!

3. HEALTHY 20 MINUTE SAUSAGE AND VEGGIES SHEET PAN
Sheet pan meals are one of my go to meals to prepare when I just want to throw something together.
You really can’t mess sheet pan meals up and they are customizable to your family’s preference. Our favorite with the sausage is sweet potatoes, cauliflower, peppers, and onions!
This meal is perfect if you want to clear out a lot of veggies and potatoes, just wash, chop, and ball altogether! Bonus is the minimal cleanup with this meal!

4. MEDITERRANEAN ORZO SALAD
This is one of my favorite recipes for the summertime!! I love how refreshing it is on a hot summer day.
You can serve it as a side or add grilled chicken and make it a delicious meal.
We aren’t a fan of olives so we decide to make it without and it turns out just fine.
I love it because I pretty much always have the ingredients on hand and it is something fresh and fast I can whip up to serve.

5. HEALTHY STUFFED PEPPER SOUP
I love making homemade soups! If you enjoy real stuffed peppers, you will love this soup!
We opt to do ground turkey instead of ground beef majority of the time. Lots of delicious flavor and a very filling soup!
This recipe is great because it gives you instructions for crocpot, instant pot, pressure cooker, and stovetop!

6. EASY SHRIMP AND VEGETABLE SKILLET
This Shrimp and Vegetable Skillet is quick and packed with nutrients.
You can opt to keep it low carbs or pair with a yummy rice. (We love our rice over here)
This recipe is great since it is a one and done pan for the meal!
I also love that it is completley customizable to your prefences.

7. BASIL PESTO MOZZARELLA CHICKEN BAKE
This is such a simple & quick dinner to throw together, but it has soooo much flavor!!
I never used to be a fan of tomatoes, but lately I just cannot get enough of them!!
It is so funny how or taste buds change over time. I am so curious to see how my girls eating habits change as they grow.
I love the taste of pesto, especially with mozzarella!
You can use the extra juices from baking and pour it over your choice of noodles or rice.

8. LEMON PEPPER SALMON SHEET PAN
Salmon is something that we recently just started to add in our meal rotation because it is such a nutritious food!
It is a rich in Omega-3 fatty acids and Vitamin B12 and is an anti-inflammatory food.
This recipe is packed with a delicious lemon pepper flavor!! One of my favorite flavors to cook with.
You can either door green beans or asparagus since they are both fast cooking like the salmon. Bonus: A yogurt dip recipe included to pair with it. Mmmm!

9. HEALTHY TACO SALAD
Who doesn’t like a taco salad?!? I am drooling over here just looking on the picture.
We could probably eat some type of Mexican food everyday because we love the flavors of it! Tacos, nachos, quesidillas, you name it!
This recipe is great because we can have salads and make the kids tacos or nachos with all the same ingredients.
Fast, fresh, and easy to throw together and completely customizable!
We add red onions to ours and pair it with Jack Salsa! (Our favorite fresh salsa!)
Your choice between beef or ground turkey.

10. PARMESAN SPINACH MUSHROOM SKILLET
This skillet is packed with nutrition from the mushrooms & spinach for a healthy dinner optin.
We like to switch it up once on a while and throw in a vegetarian meal like this one.
I love how simple and few ingredients there are to throw this meal together in no time.
If you are a fan of mushrooms and parmesan give this meal a try, you wont regret it.
